Dear Andrea,

I took the month of January off from newsletter writing as Dan and I were on a trip to Tanzania, where we climbed Mt. Kilimanjaro and did a three day safari to several national parks and conservation areas. I'm happy to report that everyone in our group made it to the top, at 19,341 feet, and back down. My lesson from this adventure is that I can truly do anything I put my mind too. It is a powerful and at the same time humbling lesson. As humans with the ability to analyze and reflect, we often let ourselves get in our own way, something of which, even as a health counselor, I am still guilty. My advice is to not underestimate the power of your mind and its ability to create or destroy. The choice is truly yours.

This month's article is a brief review of a book I began reading just prior to my trip. I found it thought provoking, inspiring and funny and wanted to share it with you. I also recommend the book on CD if you are having issues finding time to read. Read aloud by the author and her family it truly comes to life.

Also in February I am launching a new web site, along with a new business venture and a new workshop! So this issue is full to the brim with new and good. Keep reading to get the details.

Animal, Vegetable, Miracle: A Year of Food Life by Barbara Kingsolver

Before I left for my trip I was able to check out a long awaited book at the library. I've had it on hold since I saw the author read an excerpt on C-Span last summer as I was flipping channels. I was captivated by the topic (as last summer I had my first vegetable garden) and the poetic witty writing. So far it has lived up to my expectations! I am only partially through Barbara Kingsolver's book Animal, Vegetable, Miracle: A Year of Food Life and I am already moved to journal about it. This book is about Kingsolver's family journey to live on a farm and only eat what they raise, grow or can buy locally for a year.

I was struck by her eloquent, yet simple observation that most Americans don't know "what animals and vegetables thrive in one's immediate region and how to live well on those, with little else thrown into the mix beyond a bag of flour, a pinch of salt and a handful of coffee." Our ancestors skills are now either belittled or taken for granted. She goes on to ask "Isn't ignorance of our food sources causing problems as diverse as overdependence on petroleum and an epidemic of diet-related diseases?" I couldn't agree more!

Her husband, Steven L. Hopp, points out in an essay titled "Oily Food" that each food item travels an average of 1500 miles to get to our plates and if each citizen ate just one completely local meal each week we would reduce our oil consumption by more than 1.1 MILLION BARRELLS OF OIL A WEEK. That is amazing! Many of us are concerned about our diets and the environment, but feel overwhelmed and helpless to affect change. I encourage you to use this knowledge as you plan your day-to-day life. As Steven says, "Becoming a less energy-dependent nation may just need to start with a good breakfast."

I am excited to announce the launch of my new web site. You can still find me at www.soaringeaglewellness.com, but now with a new look and feel. Heart Health

Since Valentine's Day resides in February it only makes sense that along with this traditional chocolate and roses holiday we would also celebrate heart health. The good news is that you can celebrate a healthy heart and still eat chocolate! Dark chocolate that is ... Just make sure you eat it in moderation and choose a high quality brand that is at least 70% cocoa. The high anti-oxidant content in dark chocolate has been shown to reduce blood pressure.
